Through experimentation, taste preferences, and sometimes just lack of ingredients, I’ve modified that original recipe to be something totally different. Trust me, these delicious, protein-packed cookies will not disappoint.

Every time I make these cookies I end up eating 2 per day until they’re gone! Not only are they an excellent source of protein, but they’ve got some healthy fats packed in there too. They’re simple to make, naturally sweetened, and so delicious you’ll forget they’re actually good for you. Choosing the Right Protein Powder

It can be so difficult to choose a protein powder. The market is saturated, and most of the time the ingredient list is complicated and overwhelming. I have tried so many protein powders over the years and always had a hard time finding a protein powder that didn’t leave me bloated with a sore stomach. Almost a year ago, I switched to Naked Whey; a protein powder with only 3 simple ingredients: whey protein concentrate, organic coconut sugar, and vanilla. I always choose vanilla, but they have chocolate, strawberry, peanut butter, and even an unflavored option.

Step-By-Step: How to Make Protein Cookies

  1. In a high-speed blender, blend 3 cups of rolled oats until a fine flour forms. Set aside.
  2. In a large bowl, combine the oil, peanut butter, maple syrup, and vanilla and stir until smooth. Add the oat flour, the remaining rolled oats, protein powder, and salt, Stir again until combined. Fold in chocolate chips.
  3. Using an ice cream scoop, scoop each ball onto a cookie sheet lined with parchment paper. Use a fork (or your hands) to flatten the ball so it is shaped like a cookie.
  4. Freeze the cookies for 5-10 minutes or until firm. Store in the freezer in a freezer bag for quick & easy access!
  5. Makes about 12 large cookies.

Depending on the protein powder that you choose, that can affect the dryness of your cookies. I find some protein powders to be incredibly drying. If you find your cookies are really crumbly and dry before shaping them, add in a little extra natural peanut butter or olive oil.
